Supervises the beverage service team and holds them accountable for delivering World Class Service
Interviews, hires, trains employees and provides them with the necessary tools to assure maximization of the Service Profit Chain. Assists Beverage Manager in developing and maintaining all menus for wine beverage programs and specialty drinks for restaurants and bars. Is responsible for maintaining prompt friendly efficient service to all casino customers and maintaining a positive work environment. Works to accomplish departmental goals, strategies, and objectives while assuring quality product maximum guest satisfaction maintaining budgetary profit margins. Must strive to improve CSA scores by 3% each quarter and create programs to ensure positive employee morale. Monitors and maintains guest service levels to established standards.
Assists Beverage Manager in preparing annual budget and business plans.Prepares various cost and revenue reports.Maintains inventory and cost control.Ensures sufficient staffing of all bar areas and conducts training of all Bartenders, Cocktail Servers, Bar Backs, and Bar Porters. Assist in developing and updating standardized procedures and training programs for the department employees to enable them to deliver WORLD CLASS SERVICE, to include safety and personal hygiene.Provide daily instruction to beverage employees with regard to their job duties, always remembering to manage by example. I.E. Use the customer’s name as frequently as possible, shake internal and external customer’s hands when greeting them. Have positive and professional interaction with all casino/hotel departments. Act as a role model to other employees and always presents oneself as a credit to Harrah’s and encourages others to do the same.Ensures that employees have all required certification validated (Sheriff Cards, Health Cards, and Alcohol Awareness). Enforces the standards of appearance, grooming, and image guidelines of Ipanema server, and beverage personnel. Assist in designing and directing special event beverage service set-up.Perform routine inspections of all bar areas and equipment to ensure proper operation of all equipment and health department compliance.Complete supply requisitions for special events. Complete beverage employee work schedules.Review and adjust all department reports prior to submittal to management. Inspect delivered stock and return substandard items to the warehouse. Commend, coach and/or terminate beverage employees as required in compliance with established use of progressive discipline and Collective Bargaining Agreement Contract.Resolve customer complaints and service deficiencies as required.Attend departmental meetings and administrative hearings as required.
Minimum 3-years F&B experience required Minimum 2 yrs beverage management experience required. Knowledge of current PC software including word processing and spreadsheets. Proficiency in Point of Sales systems (i.e. Micros, Infogenesis) Must be able to work in a fast paced environment and maneuver to all areas of the hotel, casino and F&B service areas.Must be able to work independently and be able to calmly respond and make rational decisions when dealing with guests and employee conflicts.
Must be able to work in areas filled with second hand smoke. Must know and be able to demonstrate each position that they supervise. Verify employee work permit and required certification renewals and report to Human Resources.Obtain supplies from storage and/or the warehouse for bar areas as needed between stock deliveries.Additional related duties as requested by the Beverage Manager. High school diploma or equivalent required.
