JOB SUMMARY:
The Assistant Executive Chef will oversee the production of all food products in every outlet to ensure that product is presented up to the properties standards. He/she is responsible for maintaining the quality and most important, the consistency of the preparation of the food. Responsible for correcting and eliminating any food problems that may arise in any outlets at the property. Will enforce any and all rules and regulations pertaining to the kitchens and the property as a whole. He or she must be willing to listen as well as give answers, and make decisions that will have the best interest of the properties priorities and goals. They will oversee all aspects of proper sanitation of the kitchens. Must communicate with Executive Chef, Room Chefs, Sous Chef and Restaurant Managers. The way to better any and all situations is to open as many communication lines as possible. It is the responsibility of the Assistant Executive Chef to properly train and guide each chef and cook about our policies and procedures at the property.
The Assistant Executive Chef is responsible to oversee the proper setting up of the properties kitchens, buffets, banquets, etc. This includes all condiments, soups, sauces, meats and vegetables. All product should be check for wholesomeness daily in each and every food outlet at the property. The Assistant Executive Chef is responsible to avoid the expensive waste of food product. Proper rotation of all product and utilization of leftover product and making sure no surplus of food is produced. The chefs are responsible for creating and implementing menus for each food outlet. The chef duties are very extensive and require a consistent high energy level and long working hours. He or she must set an example for all kitchen employees such as a positive responsible attitude.
REQUIRED SKILLS: Energetic and very outgoing, enthusiastic and a motivator. Must possess at least 10 years working as a professional chef. Experience working in a fast-paced, high volume environment. Must have the versatility to meet the mental and physical demands of the area. Requires good dexterity in wrists, hands and fingers. Requires standing, walking, bending, lifting and reaching throughout the shift. Ability to lift 50 to 60 lbs.
