Responsible for the managing the overall function of all Bill's Gambling Hall and Saloon restaurants

QUALIFICATIONS:
Bachelor Degree in Food and Beverage or related field required. At least five years food and beverage management experience with preference in running a multi-unit operation, to include both front and back of the house operations. Ability to work with POS systems ie. Micros, Infogenesis or similar system. Proven ability in writing documentation, procedures and training employees to use new tools. Project Management experience (writing a project plan, measuring progress, building a team.) Excellent interpersonal, verbal and written communication skills. Ability to coordinate multiple tasks. Ability to compile, compute, and analyze pertinent data needed for reports. Ability to negotiate with diverse departments. Literate and fluent in English. Visual and auditory field range must include immediate environment. Physical mobility to move about property easily. Ability to implement strategic vision and plan into day-to-day operations.

ESSENTIAL JOB FUNCTIONS:
Responsible for managing both front and back of the house areas in a multi-unit restaurant operation. Plans and develops all menus and respective pricing structure. Institutes cost control procedures and standards of performance. Directs the development and administration of controls for all phases of the restaurant in an economical and profitable manner while maintaining established standards. Communicates with management, vendors and information systems to address the needs of the reservation function, Micros and infogenesis system. Identifies and defines business needs and recommends solutions which may result in beneficial changes in the operation of the department, improvement in the department’s impact or interaction with Harrah’s customers, improvement in the company’s ability to reduce or contain costs or to generate additional revenue. Works with manual and automated systems and assists in maintaining and identifying needs, procedures, formats, templates, testing, training and documentation. Provides project leadership and project management as assigned. Manages day-to-day operation of Food and Beverage department in the absence of senior Food and Beverage management. Acts immediately on all customer complaints to insure that a correction is made whenever possible. Counsels, guides and instructs assigned personnel in the proper performance of their duties.
