CHEF TODD ENGLISH TO OPEN HIS LATEST OLIVES
RESTAURANT IN BILOXI THIS MONTH
Biloxi, MS – December 4, 2006 - Internationally-renowned Chef Todd English will open a new, Old World-style Olives inside Beau Rivage Resort & Casino in Biloxi on December 15.
Six years after opening his last Olives restaurant in New York City, English brings this new Olives to a community battered by Hurricane Katrina — one of the deadliest storms in American history. In mid-December, Olives will open inside MGM MIRAGE’s Beau Rivage, which reopened for business August 29, 2006 following a dramatic yearlong $550-million renovation.
“I am thrilled to open my sixth Olives restaurant in Biloxi,” Chef Todd English said. “I am moved by the passion and spirit of the people in this region, and I am eager to share with them my own passions for good food, good wine, and a comfortable atmosphere in which to enjoy them.”

Though brand new, Olives, at Beau Rivage, is designed to look ages old. Chef Todd English’s vision for the look of his new restaurant was centered in the rustic appeal of an ancient Olive Oil mill. Architect Jeffrey Beers will bring this inspiration to life through wide ceiling beams of reclaimed solid oak, crackled wall coverings, weathered wood tabletops, and warm tones of chocolate brown, olive green, rust orange and caramel, set aglow by soft candle light.
Lining the mesquite end grain wood floors will be large chunks of tumbled stone and tan slate, and from the ceilings will hang bronze chandeliers shaped like olive tree branches, with tiny candles at the end of each thin stem.
At the center of Olives’ dining area will stand a custom-made, 8-ft. olive oil bottle, filled and ready to serve guests. Custom-made wooden tables and chairs will surround the green glass bottle. Diners will be able to peer into the restaurant’s open kitchen, which will feature a chef’s counter, private farm table and a 12-foot oven, custom-made in Australia and designed by Chef Todd English to bake breads, meats, and pizza. At the front of the restaurant will sit the Olives bar, which will look onto the casino.
English has selected Lafayette, La. native Michael Odom to head the kitchen of Olives, at Beau Rivage. As Executive Chef, Odom will serve a classic Olives menu enhanced with new, Southern-inspired dishes, including Olives’ famous, sumptuous handcrafted pastas styled in a Goat Cheese Dumpling black olive pasta with fresh yellow tomato ragout, and a Butternut Squash Tortelli with brown butter, sage, and parmesan cheese.
Olives, at Beau Rivage, will also be the first to feature a retail store selling Todd English’s signature line of creative cookware and appliances, The Todd English Collection, which debuted last year on HSN, the Home Shopping Network.
