Chef Randle Mair demonstrates how to make Pacific Northwest Dungeness crab cakes with fire roasted red bell pepper remoulade and New England style clam chowder.
6-7 pm: Loree Clary
Classical and jazz piano standards.
7-8 pm: Cooking Demonstration
Do the “New Wave Loco Moco” with Chef James Rosenbalm. The Rolling Hills Food and Beverage Manager presents a twist on an old Hawaiian favorite consisting of saffron rice topped with Dungeness crab cakes, poached egg and 3 pepper hollandaise.

Saturday, March 3rd
1-2 pm: Cooking Demonstration
Chef Ron Hafey cooks up sweet pea risotto with spring asparagus accompanied with chicken cordon bleu. 2-3 pm: Hibbity Skibbity
3-4 pm: Cooking Demonstration
Chef Jeremy Olsen prepares crab, mushroom and artichoke empanadas. Chef Robin Wallace sweetens up life with chocolate cups filled with chocolate mousse topped with spun sugar.
4-5 pm: Wine Demo
Get tips on enjoying California’s finest wines.
5-6 pm: Loree Claree

6-7 pm: Cooking Demonstration
Learn how to make Chef Ann Leon’s famous Vietnamese spring rolls with plum peanut sauce and cappuccino truffle torte with chocolate wood grain.
7-9 pm: Second Hand Smoke
This versatile trio plays everything from blues to classic rock to oldies to country.
After the Festival, stay for live music and dancing with the Originals, golden oldies band.
